I’m one of those people who makes a weekly meal plan. I’ll plan what we’re having for dinner each night, what kind of fruits and snacks we’ll be eating that week and I keep a list of household stuff we’re about to run out of.
Then every Monday I go to the shops and I’ll do one grocery purchase for the whole week.
One of my dinners is titled “Emergency Dinner” consisting of bean salad, tomato + canned salmon salsa and potatoes. (Did I mention we’re pseudo vegan?)
Ideally this ensemble is the spare dinner plan, in case things my day goes pear-shaped and I have only 15 minutes to prepare and cook dinner.
But everyone loves it so much, that I make it once a week. The boys eat so much of it. It makes me SO happy.
